Monkfish rice

Ingredients:

  • 1 kg Monkfish
  • Salt to taste
  • 300 gr shrimp
  • 1 onion
  • 2 cloves of garlic
  • 1.5 dl olive oil
  • bay leaf
  • tablespoon of tomato paste
  • sprigs of cilantro
  • Piripiri to taste
  • 7.5 dl water
  • 150 gr rice


Directions:

Clean, cut and season the monkfish with salt.

Peel the shrimp, leaving the head and tail.

Chop the onion and cloves of garlic and sauté with olive oil and bay leaf.

Add the tomato paste, cilantro, piripiri and water. Bring to a boil and simmer.

Add the monkfish and the rice (previously rinsed). Cook (15 minutes) and, when almost cooked, add the shrimp.

The rice should be malandrinho (somewhat wet).
